ข้าวแช่เป็นอาหารที่มีต้นกำเนิดมาจากชาวมอญ ชาวมอญถือเอาข้าวแช่เป็นอาหารสำคัญในประเพณีวันสงกรานต์ โดยในวันที่ 13 เมษายนของทุก ๆ ปี หรือวันมหาสงกรานต์จะต้องจัดข้าวแช่ครบชุดไปถวายพระ และถวายแด่เทพีสงกรานต์ เพื่อความเป็นสิริมงคล และเมื่อชาวมอญอพยพเข้ามายังประเทศไทย ประเพณีข้าวแช่ในวันสงกรานต์จึงตามติดชาวมอญมายังประเทศไทยด้วย ทำให้ชาวไทยเริ่มรู้จักข้าวแช่ตั้งแต่นั้นเป็นต้นมา
