การผลิตน้ำตาลทรายในประเทศไทยตั้งแต่มีการปิดหีบอ้อยของฤดูการผลิตปี 2554/2555 โรงงานน้ำตาลทั้ง 46 แห่งในประเทศได้หยุดการผลิตน้ำตาลทรายดิบ แต่มีบางโรงงานได้นำน้ำตาลทรายดิบไปละลายเพื่อแปรสภาพเป็นน้ำตาลทรายขาวและน้ำตาลทรายขาวบริสุทธิ์ และเมื่อมีการเปิดหีบอ้อยผลิตน้ำตาลทรายของฤดูการผลิตปี 2555/2556 ปริมาณน้ำตาลที่ผลิตได้ตั้งแต่เดือนมกราคม – ธันวาคม 2555 จำนวนทั้งสิ้น 9,966,655.68 ตัน ในจำนวนนี้เป็นน้ำตาลทรายดิบจำนวน 4,923,697.70 ตัน หรือ 49% ของผลผลิตน้ำตาลทั้งหมด
ประเทศไทยเป็นผู้ส่งออกผลผลิตจากอ้อย และน้ำตาลทรายเป็นอันดับ 1 ของอาเซียน มีการส่งออกไปประเทศในอาเซียนประมาณ 2.73 ล้านตันในปี 2554 ขณะที่ตลาดดังกล่าวมีความต้องการนำเข้าประมาณปีละ 2.9 ล้านตัน ไทยส่งออกน้ำตาลในปี 2555 ทั้งสิ้น 7,544,398.41 ตัน เพิ่มขึ้น 13%
